Vegetables that count as starches rather than vegetable are great substitutes for some of our weekly grain dishes. Not all of course, but if you replace two or three over the course of a weeks meals you will have introduced as wider range of flavors and nutrients to your diet. You are probably well aware of potatoes and may be aware that corn, on or off the cob, is a starch. What about parsnips, rutabagas, pumpkin and other winter squashes? These vegetables are starchy vegetables that are full of healthy nutrients and dynamic flavors.
