We're grilling now!
My favorite thing to cook on my gas grill is pizza. Yup, pizza. Don't get me wrong, steaks and corn on the cob, big slabs of salmon and shrimp kabobs or burgers and brauts these are all great cooked on a grill. But, pizza is the best! I have a gas grill but if you use a charcoal grill no problem! Either way be sure your thermometer is accurate!
When cooking flat breads on the grill...
Grills are great for flat breads like naan and pitas. As the dough is rising pre-heat the grill, lid closed, to 500F. Wipe the grill with an oiled paper towel, I use olive oil but any vegetable oil will do. Turn the gas down to med/low or thin out the amount of coals under the area of the grill you are going to use. Then just lay each bread down on the grill and lower the lid, 3 minutes later flip the breads over and cook for another 2 minutes and eat! Watch the time! Your grill setup may need adjusting or you may want to adjust the baking time. The times do depend on the type of bread but it's that easy. No heating up the house, flat breads and pizzas cook so fast!
I use a pizza stone for my pizzas. With the stone on the grill and the lid closed, I pre-heat the stove to 500F for 15 minutes and then reduce the heat under the stone to low. After about another five minutes, using a parchment covered peel, I slip the pizza dough onto the hot pizza stone, paper and all. The paper burns away from around the pizza. Then, using the peel lift the pizza off the stone, throwing the parchment under the pizza away. You know, instead of eating it. You can also quickly open the lid to the grill after about 2 minutes and slide the parchment paper out. And...you can cook a frozen pizza or one that you bring home to bake right on your grill. No heating up the house and pizzas cook faster producing a nice crisp crust.
