Welsh Cakes I love eating warm Welsh Cakes right off the griddle, no butter, no jam, no curd, just melt in your mouth hot cakes. Often served for an afternoon tea or a treat at a meeting, Welsh Cakes hold up well for 2 or 3 days after they are baked. Freeze them in an airtight container up to a couple of months.

Notes: Flavored tortillas
Tomato/herb-add 2 Tablespoon of tomato paste, substitute water with V-8 and add 1/4 teaspoon each of cumino and garlic powder.
Pesto-substitute 4 Tablespoon of pesto for the oil.
Cinnamon-use all butter instead of oil, add 1/2 teaspoon of cinnamon and 2 teaspoons of sugar.
Whole wheat tortillas-use 1 cup whole wheat, 1 cup white flours and increase water by 2 to 3 Tablespoons, or use all whole wheat and 3/4 cup of water.
