Making cookie dough up ahead of time and freezing it allows you a range of freedoms!

So let's start simply. Make up a batch of cookie dough, say, Chocolate Chip Cookies. Drop the cookie dough on a plastic wrapped baking sheet or two using two tableware teaspoons. Scoop up the dough with one and use the other to scrape off onto the prepared pans. Because you are not baking them now you can drop the cookies closely together but not touching. Now, freeze for 4 to 6 hours. Then put them in a zip style gallon plastic bag. Label with the kind of cookie, the temperature and length of baking time and return to the freezer. You now have Chocolate Chip Cookies ready to pull from the freezer and pop into a pre-heated oven or toaster oven.
Warm cookies are just 13 minutes away. Pull them out for a snack, a surprise visit from family and friends or a last minute potluck or scout meeting.
Rolled cookies/Refrigerator cookies - Follow the instructions for mixing, rolling in wax paper and refrigerating. Then slice and stand back up in the roll and re-wrap, now freeze and then tuck into a labeled zip style bag or freezer container and tuck away for another day.

To make cookie dough for ice cream
Mix up the kind of cookie dough you want to use...sugar cookies, chocolate chip, peanut butter, but without the eggs. The thing is, you do not want to add the eggs in because the dough will not be cooked. While you can buy pasteurized eggs, it is just easier to leave the egg out. Unless you intend to use a lot of cookie dough, I'd recommend making a half batch. Using a 1/2 teaspoon measuring spoon scoop little balls of dough out and drop them on to a clear wrap covered baking sheet and freeze. Once frozen put the cookie dough drops into a freezer container or zip style bag label for use and pop back into the freezer. The dough will be good for four to six months. Now you're ready to add frozen cookie dough to the ice cream bucket once it is done or when the machine tells you it's time for add ins.
