A great recipe for using zucchini! A sauce that everyone in my family likes, including the non-eaters of zucchini.
I have used this sauce over pasta, as the sauce in pot pies and as the base for Creamed Chicken 'N Peas with egg noodles, in place of "cream of something" soup.

This is so quick to make! I like to make up a large batch and then freeze it in 2 cup batches to have ready during the week when time is tight. It has the advantage of being gluten-free if you are feeding a celiac or someone with wheat allergies, as well as, tomato free for those with nightshade allergies.

Do you have left over chicken? Throw together a batch of biscuits or pop a can and bake them. If you have frozen 'ready to cook' biscuits pull the number needed out of the freezer, place on a parchment lined baking sheet and pre-heat the oven to 425F . While the bread is cooking, about 12 minutes, shred your chicken and stir up a pan of medium white sauce. Season the sauce with some fresh chives, a bit of pepper and stir in the chicken. By the time the biscuits are out of the oven you are ready to serve dinner! Serve with a toss salad or leftover veggies. Want to make it even easier? Toss a cup of frozen peas or mixed vegetables in with the chicken and you have a one pot meal!
