Bake Some & Freeze Some
This is a very straight forward idea!
Take and bake or cook some of whatever you are making and freeze some for later.

Coffee cakes and quick breads - If you want to serve half of a coffee cake for instance, you can divide the batter into two smaller pans. Bake one and put one in the freezer for another day. If you don't have lots of cake pans, purchase the foil/lid pans at a restaurant supply store or your local grocery store.

Italian Sauce - Spaghetti, Pizza and Eggplant Parmesan
- Follow the directions for pan preparation. If your recipe calls for a 9 X 13 or a Bundt pan, divide the batter into two 8 X 8's. One to bake & serve and one to freeze and then bake up fresh when you want it . (Or freeze one full size or two smaller unbaked coffee cakes for later)
- After putting one in the oven, place the other in the freezer. Once frozen. slide it into a labeled zip style bag. I use a straw and slide it into the last inch of the zip closure and suck out most of the air in the bag, then close up tight and freeze. Of course if you have a commercial Suck/Sealer you can use that. Mine lives on a shelf in the storage/laundry room and for one or two bags I don't bother. If you do use a commercial machine, freeze before removing the air and sealing.
- When you are ready to bake the frozen items, remove from the freezer and take out of the bag. Pre-heat the oven and bake as directed. You may need to bake for an additional 5 minutes or so.

- Make up a double batch. Serve dinner and freeze the remaining sauce to be used for another meal later in the week or the following week, an easy dinner on a hectic day.
