Carolina Style BBQ Sauce |

The BBQ sauce is 1) tomato free and 2) nice and clingy, it stays on the chicken while cooking and doesn't burn the way that sauces with sugar added do. It is a tangy sauce with nice undercurrents of flavor. I substituted the cayenne powder the original recipe called for with smoked paprika.
