Whether you have Celiac Sprue, an allergy to gluten or you have migraines, etc. you have more options today than ever before! Baked goods taste better and have better texture now than most anything you could find ten or more years ago. Many people walk away from gluten flour substitutes citing empty calories and lots of them! But there are some fine substitutes including sorghum and quinoa flours that have protein and trace elements not found in white rice flour or corn starch that is often used to add bulk to baked goods replacing wheat and other gluten flours.
For whatever reasons you have to cook gluten-free breads, tortillas or rolls here is a selection of tried and true recipes that I have used for family and friends with wheat allergies, Celiac disease, migraines and skin conditions. If you are cooking for yourself or someone with a wheat allergy that is severe, contamination can cause rashes, hives and anaphylactic shock so be aware that all items used to prepare gluten-free food in and with should be washed. Kitchen appliances and cupboards should be washed down, pot holders and dish towel should be freshly laundered and all utensils including bowls, measuring devices, rubber scrapers and so forth should be freshly washed. Flour dust can hang in the air for more than 30 hours! Make up your gluten-free items before gluten products when making up both gluten-free and non-gluten-free items. Once made, make sure that gluten-free foods are cooled and well covered so as not to be contaminated when making other non-gluten-free foods. |
